A New Restaurant Flew Into Evergreen…

By Josie Hess

A new restaurant has flown in Evergreen. Its name: The Hummingbird Club.

This loyal journalist was happy to be at the opening night of the club, and I can say with confidence that it is one of the best restaurants in town. It’s quite the sensation just off King Soopers- where La Cantina used to be, this historic location has been restored. The Creole and Cajun food is superb and the staff is incredibly kind. You might just run into one of our Louisianan teachers there, such as Mr. Mattive and Mr. Gardner.

As a vintage architecture enthusiast, I was thrilled to see the original 1920’s bar had been revived. However, such old buildings have been home to hauntings. Hidden inside the walls of this antique bar, a single wooden board was resting. A name carved into it, Marcel Gusto. As the Hummingbird Club is now a Cajun inspired restaurant, a French ghost is very fitting. Perhaps he will be happy with his new home- your journalist can only hope.

Take this as your sign to check out the Hummingbird, along with the other historically haunted buildings around town. Bring an offering or two- I hear they like the Hummingbird Gumbo.

Please note a biased perspective.
